Saffron Chicken Kabob

NSTRUCTIONS

  1. -Add the diced onion and lemon juice to a blender and puree into a smooth paste. You can also finely grate the onion instead and add the lemon juice to it.
  2. Dissolve the crushed saffron threads in 1-2 tablespoons of hot water in a bowl for 2-3 minutes
  3. Add the onion-lemon juice paste, yogurt, turmeric, pepper and salt to the saffron bowl and mix well. This is your marinade.
  4. Add the marinade to the cubed chicken breast in either a zip lock bag or a bowl and allow the chicken cubes to marinate for a minimum of 2 hours but preferably overnight for the best tasting kebabs.
  5.  Skewer the meat onto flat skewers and cook on the grill (charcoal is best!) until the meat is cooked through.
  6. -Squeeze fresh lemon juice over the kebabs when done and serve garnished with onion & chopped parsley.

INGREDIENTS

2 lbs Chicken Breast, cubed

  1. 1 Small onion, diced
  2. 1/3 cup lemon juice
  3. 1/4 tsp Saffron threads, crushed & dissolved in 1-2 Tbsp Hot water
  4. 1/3 Cup Plain Greek Yogurt,
  5. 1/4 tsp Turmeric
  6. 1/2 tsp pepper
  7. Salt, to taste
